The IGT Red of Tuscany named "Appunto" is produced using Sangiovese and Merlot grapes. These grapes have been hand selected from a 30 year old vineyard (double or single-arched cane - trained in the traditional Tuscan style) and also from our new cordon trained vines. The low density (4.500/5.500 plants fro hectares) allows for a controlled production which never exceeds 60 hl/ha.
The grapes are harvested at their optimal ripeness to capture the freshness of
perfume and taste. They are immediately put into steel vats where they remain for 12-15 days. After the first alcoholic fermentation takes place the must rests in vats for 5/6 months after which it is bottled to retain the youthful characteristics.
